Cat Post: My Favorite Cajun Cuisine
If you have read my abbreviated bio, you already know that I am a Louisiana native. You may also have assumed that it was only a matter of time before I wrote a post about food, and you were correct to make this assumption. I will, for your sake, keep it brief and only mention two of my favorites.
One of my all time favorite dishes is the turducken. A turducken is created by stuffing a turkey with a duck, a chicken, sausage, and or corn bread dressing (and it is semi-boneless). This culinary master piece originated in a town a few miles from my home, and it his since received huge amounts of publicity. I strongly recommend trying one if you haven’t already. They are great for the holidays too.
My other favorite Cajun dish would have to be boiled crawfish (naturally). Crawfish are relatively easy to prepare, and if you are wondering about the taste, just imagine the best shrimp you’ve ever had and multiply that experience by two. They really are that good!
Crawfish are probably considered to be more popular than turduckens, but I have a hard time choosing between the two.

is it true that the crawfish smell when being boiled? i’ve been told not to do it indoors for that reason

If you’ve smelled boiled crabs then you already know what crawfish smell like. Think of them as freshwater shrimp. Regardless of the smell, we always cook them outside because the boiling pot and burner are too bulky to use indoors.
